This is a Thai chicken recipe. In Asian cuisine, quince is often used when preparing meat dishes. Quince, with its delicate sourness and aroma, complements the taste of meat and itself becomes an excellent side dish, soaked in meat juice. Instead of chicken, I used turkey thighs. They need to simmer a little longer. It turned out very tasty.

What to cook from:

Quince - 1-2 pcs.

Turkey thighs - 2 pcs. - 800g

Fresh ginger - root 3 cm long

Onions - 1-2 pcs.

Butter - 75g

Sweet paprika - 1 teaspoon

Turmeric - 1 teaspoon (or a pinch of saffron)

Salt

Broth or water - 350ml

Preparation

Remove the bone and skin from the thighs (use them for broth). Cut the pulp into large pieces. Fry in oil until golden brown and transfer to a saucepan.

Cut the quince into four parts, remove the core. Cut the quince into slices.

In the remaining oil in the pan, fry the quince slices until lightly browned. Place in a saucepan over the meat.

Fry them in a frying pan after the quince until the onion is transparent. Add salt, paprika and turmeric. Mix.

Pour in broth or water and bring to a boil.

Pour the contents of the pan into the saucepan. The liquid should reach the edge of the meat.

Cover the saucepan with a lid. You can simmer on the stove over low heat until the meat is cooked. You can put the saucepan in the oven, preheated to 175 degrees for 45-50 minutes.

Prepare rice as a side dish for this meat.

Despite the unusual combination, turkey with quince, roasted in the oven, turns out tasty and tender.

Ingredients:

1 kg turkey (any part of the carcass);
3 quince fruits;
3-4 garlic cloves;
100-120 g butter;
water or broth;
salt, pepper and seasonings;
cooking fat.

How to cook classic turkey with quince in the oven

Divide the turkey into portions, wash, sprinkle with salt and seasonings, add crushed garlic and mix thoroughly.

Rinse the quince fruits, remove the core and cut into slices.

Heat the butter in a frying pan, simmer the quince slices on it, and then remove them from the container.

In the same bowl where the quince was prepared, fry the turkey pieces, adding a little more oil if necessary.

Place the poultry pieces in a fireproof container, place the quince on top, pour in a little liquid and place in the oven.

Place the finished turkey with quince, baked in the oven, into plates, sprinkle with herbs and place on the table.

Cut the washed turkey fillet into portions, mix with salt and seasonings.

Remove the core from the quince and cut the fruit into slices of medium thickness.

Put a little fat in a frying pan and fry the quince, then pour in the broth and simmer the mass for a short time, adding a little salt.

Place slices of meat in a deep baking dish, pour the contents of the frying pan into it and place the dish in the oven.

If you wish, you can quickly cook the turkey in the oven in portions, finely chop the fillet and place it in pots, and put stewed quince slices on top and pour in the broth.

Cream gives meat dishes a special, delicate taste, and garlic makes them richer and piquant.

How to cook

We cut the turkey meat into portions, add salt and seasonings, then mix and send to fry in a frying pan.

Remove the cores and stalks from the quince, cut into slices and fry in the same fat in which the turkey was cooked.

We peel the garlic and pass it through a press, cut the washed greens.

Place pieces of poultry in a bowl with high walls, place quince slices on top and level them over the surface.

Sprinkle the dish with garlic and herbs, pour in the cream, diluting with a little water if necessary, and send to bake.

You can bake the turkey in a creamy garlic sauce with quince in the oven without adding herbs, but sprinkle it on the prepared dish, which is divided into portions.

Option 4: Turkey with tomatoes, onions and quince in the oven

Another option for preparing the dish is to bake the turkey in the oven with tomatoes, onions and quince.

During the work you will need:

turkey;
quince;
several large onions;
carrot;
bell pepper;
garlic;
cilantro;
salt;
seasonings suitable for poultry;
a little wheat flour;
table vinegar;
vegetable fat for frying.

How to cook

Cut the turkey into pieces and fry a little, sprinkling with salt and seasonings.

Peel the onion heads, cut into wide half rings and place in a bowl, pouring vinegar on top.

Chop the bell peppers and carrots, chop the garlic and fry the ingredients in vegetable fat, and then add the diced quince and keep it on the fire for a short time.

Finely slice the cilantro with a knife and cut the tomatoes into circles or semicircular slices.

Place the ingredients in layers in a deep bowl. First we place pieces of meat, then pickled onions, fried garlic, pepper and quince, place tomato slices on top, and then throw in the greens. Sprinkle each layer with a little flour, then place the container in the oven.

Since the dish contains a sufficient amount of vegetables, it is not necessary to make a side dish for turkey with tomatoes, onions and quince baked in the oven.

Option 5: Turkey with quince, honey and prunes in the oven

If you marinate meat in liquid honey, it will become soft and tender, and the sour berries of prunes will enhance the taste of the dish.

For cooking you will need:

turkey fillet;
quince fruits;
prunes;
garlic cloves;
liquid honey;
salt and seasonings;
broth or water;
fat for frying.

How to cook

Chop the bird fillet, sprinkle with salt, spices, crushed garlic and add a few tablespoons of liquid honey, then mix thoroughly and leave to marinate.

We free the quince from the core and stalk, cut into slices and fry a little.

We rinse the prunes under strong pressure of cold water and let them dry a little.

Place turkey pieces, quince slices and dried fruits in a deep bowl, add to the broth or water, pour over and place in the oven.

To create this dish, you can replace prunes with dried apricots or make turkey with quince in the oven, adding assorted dried fruits.

Place the sorted rice grains in a colander, rinse under a strong stream of cold water and let drain.

Peel the onions and carrots, chop them and fry in lean fat until tender, adding salt and pepper to the vegetables.

Heat the butter in a frying pan and sauté the quince until soft, then remove from the container.

Using the same oil in which the quince was fried, fry the rice grains.

When the cereal dries and becomes transparent, saturated with fat, pour filtered water into the container, sprinkle the grains with salt, seasonings, and simmer until the liquid evaporates.

Mix the cooked rice with the onion and carrot fry until smooth, and then put it in a deep fireproof bowl, greased with vegetable fat.

Place the turkey marinated in soy sauce on top of the mixture of rice and vegetables, and place quince slices on it.

Pour purified water or broth into the container and place it in the baking compartment.

When the meat is ready, take the dishes out of the oven and serve the turkey baked with rice and quince, sprinkled with herbs. Additionally, you can put sliced ​​fresh vegetables or pickled cucumbers and tomatoes on the table.

Cooking turkey with quince in the oven is not difficult at all. You can create many variations of dishes based on these components, combining them with cereals, vegetables, mushrooms and various sauces.

Turkey meat without bones 500 g

Large quince 1 piece

2-3 onions

1 clove of garlic

1 tbsp. ketchup

Quince has an amazing aroma and is able to mask the specific odors of certain types of meat (for example, lamb, rabbit or turkey). Therefore, the combination with meat is considered classic.

Wash the quince and cut into fairly thick slices, removing the core;

Pour a little vegetable oil into the bowl, add quince, sprinkle with 1 tsp. sweet ground paprika and fry on the “brown” setting until signal (about 10 minutes, depending on the amount of product);

Add onion in half rings and turkey cut into small pieces, stir and fry for another 10-15 minutes;

Pour in 1 multi-glass of water, add ketchup, a clove of chopped garlic, curry, salt and pepper to taste, reset the “brown” and turn on the “porridge” mode for 1 hour.

Turkey with quince and prunes

You will need:
Turkey fillet – 700-800g
Large quince - 1-2 pieces, if small, then more
Prunes – 15-20 pieces, in general, to taste
Garlic – 4 cloves
Olive oil – 3 tbsp. spoons
Butter – 2 tbsp. spoons
White wine (dry) – 100-120g
Salt, freshly ground pink pepper.

Let's cook?!

1. Wash the turkey fillet, cut into large pieces, dry with a paper towel,
rub with salt and freshly ground pink pepper.

2. Fill the prunes with warm water.

3. Peel the garlic and crush it with a knife.

4.Heat a frying pan with olive oil and add garlic.

5.As soon as the garlic begins to give off its aroma, place the fillet pieces in the frying pan.

6.Fry on all sides until light golden brown.

7. While the fillet is fried, cut the quince into slices and remove the core (no photo, didn’t have time to take it).

8. When the fillet is fried, transfer it to a suitable baking dish.

9. Remove the garlic from the pan, put the quince in it and fry for 4-5 minutes.
When the quince is slightly browned, add butter to it, fry for another minute,
until the butter melts and remove from heat.

10. Place the quince on the meat and add the squeezed prunes.

11. Pour the sauce that formed in the frying pan onto the meat and add wine.

12. Cover the pan with a lid or foil and place in the oven preheated to 180°C for 50-55 minutes.
Then remove the lid and cook in the open form for another 15-20 minutes. Remove from the oven.

You can serve the meat cut into slices, adding quince and prunes as a garnish.

Or you can have a whole piece, of course, also with quince and prunes.

I’ve already told you how much pleasure it is to watch truly passionate chefs cook. Therefore, it is not surprising that I went to visit Svyatoslav Kasavchenko with special enthusiasm and anticipation.

Firstly, Svyatoslav is not just an amateur cook. Deputy editor-in-chief of the newspaper "Krasnodar Izvestia", columnist of "Yugopolis" and a blogger with a thousand people, he recently published the book "Kuban Cuisine with a Taste of History", where he talks in detail and fascinatingly about the traditions and technologies of preparing Kuban dishes, their origin, modern adaptations and, of course, provides detailed recipes.

Secondly, until the last moment I didn’t know what exactly Svyatoslav was going to cook for us and was quite intrigued. I’ll say right away that the surprise was a success: turkey fillet baked with apples and quince exceeded all my expectations.

It should be noted here that, despite the not quite Kuban seasonings, this dish can claim authenticity by its method of preparation. Long simmering at low temperatures is, in principle, characteristic of local cuisine. In Kuban, the stove was heated mainly for business purposes - in winter for heating, so they cooked on cooling coals in order to save fuel. This cooking method makes any meat very soft, maximizing the juice and aromas of the seasonings used. And since the recipe, despite all the visual appeal of the finished dish, does not require much effort and vigilant control, it is perfectly suited for the holiday season.

For New Year's dinner for four we will need:

  • 700 g turkey fillet
  • 1 tsp. cumin seeds
  • 2 tbsp. l. poultry seasonings
  • 3 tbsp. l. sesame
  • 2 small quinces
  • 5-6 medium apples
  • 1-2 tsp. cinnamon
  • ground black pepper
  • 2 tbsp. l. Sahara
  • vegetable oil for frying




1. Cut the apples into eight parts, remove the core, but leave the peel:


2. We also remove the core of the quince and cut it into thin slices:


3. Sprinkle apples evenly with cinnamon, quinces with black pepper:


4. In a dry frying pan, first fry the cumin for half a minute:


5. Then add sesame seeds to it and, stirring continuously, fry until golden brown:


6. Rub the turkey with poultry seasoning:


7. Then roll in the mixture of grains and place in a baking dish:


8. In heated vegetable oil, fry the quince until soft:


9. Add sugar (if quince itself is sweet, sugar can be omitted). Stirring, fry for a couple more minutes:

11. In the same oil, fry the apples until golden brown and also put them in the mold along with the oil in which they were fried:


12. Bake for 3-5 hours at 90°C. Serve the turkey on a large platter surrounded by baked fruit:


For example, rice can serve as a side dish, and the broth with seasonings formed during the baking process will serve as a sauce.


The turkey baked in this way turned out to be unexpectedly tender, juicy and incredibly aromatic; fruits and seasonings, perfectly combined, gave it a bright taste and a completely solemn appearance.

This is an ideal dish for any holiday, especially for the New Year, when the hostess does not have a single free minute. Because you can prepare the ingredients and put them in the mold the day before; the meat will marinate better overnight. And since the meat is baked at a low temperature, there is no danger that it will burn or dry out; long simmering in the oven will only make it tastier; you can take it out just before serving, without the need to reheat.
