Step by step

  1. In the summer season, you want to eat as many vegetables as possible in order to replenish the supply of vitamins. I once tried this dish with a friend and it stuck in our family. It is budgetary, tasty and satisfying. And also it is an excellent side dish for meat. I advise you to cook it. We have three types of green beans. But this is not necessary, take any green beans.
  2. Wash beans, cut off the tail and cut into 2-3 pieces, depending on the length of the pod.
  3. Boil the beans in salted water. Cook for about ten minutes. Try it, it should be soft but not overcooked. We drain the water, and we ourselves will take up the next stages of preparation.
  4. Cut the onions into small cubes.
  5. Rub the carrots on a grater with large holes.
  6. Saute the onions and carrots in vegetable oil. But don't overcook. They should give their taste and aroma to the oil, but not brown.
  7. We cut the cabbage, the width of the cut depends on your taste.
  8. We send chopped cabbage to onions and carrots and simmer together, add salt and pepper. Make the fire small so that the cabbage releases its juice and does not burn.
  9. When the dish is almost ready, add tomato puree and sour cream.
  10. And also - boiled beans. Mix well, let stew together for five seven minutes.
  11. Our dish is ready.

All summer my mother has been doing nothing but canning, pickling and freezing something. Only in winter do you begin to understand what all this work is for. After all, how nice it is to drink tea with fresh raspberries or strawberries on a winter evening, bake a pie with fresh mushrooms. So, when I became a mother, I try to do everything so that my family always has a delicious lunch or dinner. The supply of fruits remained with my mother, since there is enough of this good in the village, and I, in turn, try to stock up on other, no less useful products.

Our family loves borscht, so we have to cook it at least once a week. Even here my mother simplified my task and makes special borscht preparations in the summer, i.e. I no longer think about the fact that in the evening I should not forget to soak the beans, but there are, of course, such moments. I also really like borscht with asparagus, because, as a rule, I always, as a rule, already have boiled and frozen asparagus beans in the refrigerator. It is very convenient and shortens the cooking process at least for a little while, but still nice. But this time the green beans came in handy for another purpose: I decided to cook stewed cabbage with asparagus beans. Very tasty, light, and such a dish will perfectly complement any meat dish.

To make cabbage stew with asparagus beans, you will need:

cabbage - ½ head of cabbage
green beans - 400 g
onions - 1-2 pcs.
tomatoes - 2-3 pcs.
ground coriander - ½ tsp
dry mushroom powder - 1 tbsp. l.
vegetable oil
salt
pepper
parsley

How to cook cabbage stew with asparagus beans:

1. First you need to prepare the green beans. Whatever dish you cook with green beans, boil them first. To do this, we clean it from twigs, rinse and cook in slightly salted water. The time of its boiling depends on how ripe the beans are. Young beans take about 5-7 minutes to cook, overripe beans take 7-10 minutes. You can determine how cooked the beans are by look and taste. When the beans are ready, put them in a colander and let the liquid drain out. Cut the cooled beans into small pieces.
2. Wash the white cabbage and chop finely. We crumple with our hands, add a little salt. Next, put it in a preheated pan with vegetable oil so that the cabbage decreases in volume.
3. Peel, wash and finely chop the onion. Add to cabbage.
4. As soon as the onion becomes transparent, add the boiled beans and dried mushroom powder. Pour in a small amount of boiling water and cover with a lid. Simmer over low heat until tender.
5. In the meantime, wash the tomatoes and chop finely enough.
6. Add spices and chopped tomatoes to cabbage 10 minutes before the end.
7. When the dish is ready, you can serve it to the table by placing it on portioned plates.

During the summer-autumn period, when there are many local vegetables on sale, various salads and stews are the best option for both lunch and dinner. Optimal for both the family budget and health. Plus, these cabbage vegetable dishes are a great option if you have a vegetarian or fasting family in your family.

    Ingredients:
  • cabbage - 500 g,
  • onions - 2 medium-sized heads,
  • green beans (fresh or frozen) - 100 g,
  • garlic - 2 cloves,
  • green peas (canned) - 120 g,
  • carrots - 75 g (fresh or frozen),
  • allspice peas - 3 pieces,
  • bay leaf - 1 piece,
  • universal seasoning (other spices) - 0.5 tsp,
  • frying oil - 3 tablespoons,
  • green onions (or any greens) - 1 bunch,
  • salt to taste.

Today's stew can be supplemented and modified according to personal preference. Love your homemade celery? Cut into rings and add! Don't you or your family members like green beans? Remove from ingredients or replace with canned white / red beans, asparagus. Are there a lot of tomatoes in the fridge? Add a couple to the stew! Possible in tandem with bell pepper.

Lean cabbage vegetable stew with green beans and green peas

As you can see, the field for experiments is huge! But first, let's explore the basic one based on white cabbage. The dish turns out to be hearty and balanced.

Pour water into a small saucepan and place over high heat. When the water boils, add the salt, stir and add fresh or frozen green beans to it. Wait for the second boil and boil fresh beans for 6-7 minutes, and if using frozen, then 10 minutes. Then fold in a colander and let cool.

Preheat a skillet with vegetable oil. Chop the onions into cubes and fry until translucent.

Chop the cabbage with a knife, not very finely and send it to the onion (if there is a combine or a shredder, you can use it).

Next, lay out the coarsely grated carrots, mix.

Simmer together for 15-20 minutes, add water if necessary. Add a versatile seasoning to the vegetables (you can use any other spices you want), salt, peppercorns, and lavrushka.

Cut the boiled green beans to approximately the size of green peas. Toss with vegetables.

Finely chop the garlic with a knife and send to the pan.

Throw the canned peas in a colander, after a few minutes, when the excess liquid drains, transfer the peas to the rest of the vegetables.

Stir well, remove the bay leaf. Check the cabbage for doneness. Turn off the gas, cover the stew with a lid and let it brew for 10-15 minutes. Then finished vegetable cabbage stew spread out in portions. From this amount of ingredients, six adult servings come out. Rinse green onions, dry, cut into rings. Sprinkle them on top of each serving.
