The food distribution line is designed for short-term storage

and distribution of first and second courses, hot and cold snacks and drinks, confectionery, providing customers with cutlery

in the catering system.

The versatility of the distribution line and the complete set of modules on an individual order allows you to organize meals for various categories and groups of people of an almost unlimited number at such facilities as: industrial enterprises, educational institutions, military units, canteens, cafes, etc.

The Atesi enterprise currently produces 3 types of food distribution lines - Bella-Neva and Bella-Nota and the Bella-Nota mobile food distribution line - a mobile food distribution line with hinged guides for trays, the modules of which are equipped with wheels.

1. General instructions.

1.1. The power distribution line operates from an alternating current electrical network with a frequency of 50 Hz and a voltage of 220 V ± 10% with an additional grounding wire.

1.2. Climatic conditions for line operation: ambient temperature from 10 ° С to + 35 ° С; relative humidity no more than 60% at a temperature of + 20 ° С.

When operating the line modules in an area with a maritime climate, the modules must be installed in a closed room with air conditioning.

1.3. Connect the electric power supply to the stationary modules of the distribution line by means of piping hidden in the floor. The wire diameter must be calculated based on the total load current of the plug-in modules. Pipe diameter not less (12 mm). The height of the pipe branch from the floor is 90 ... 100 mm. Places for supplying pipe outlets of electrical power to the modules are located in the left near corner from the side of the service personnel.

1.4. When installing modules equipped with shelves with lighting, it is necessary to connect the power supply to the lamp. To do this, thread the conductor (brought out to the tabletop of the module) through the left rack of the shelf and connect it to the terminal on the shelf according to the wiring diagram.

1.5. The mobile modules of the power distribution line are connected to the mains by means of the power cord and plug, which are supplied with the modules. The length of the electrical cord is at least 1.5 m.

1.6. Mobile modules are installed and connected to the power grid by the consumer himself.

1.7. Moving mobile units should be done on level surfaces, avoiding impacts on thresholds, steps and other uneven surfaces.

1.8. All work related to connecting the line modules to the mains must be carried out by a qualified specialist who is authorized to work with electrical equipment.

1.9. The electrical network to which the distribution line is connected must be equipped with a separate panel with an AK-50 automatic circuit breaker for a load current not less than the total load current of all plug-in modules according to the table.

2.2. Heating equipment 2.2.1. Module "Bain-marie for first courses"

Designed to keep hot containers (boilers) with first courses. Has 6 levels of temperature adjustment, allowing you to maintain the temperature of the first courses from ambient temperature to boiling. Position "0" of the temperature regulator (heating off) corresponds to the vertical position of the knob (zero at the top point). By turning the control knob clockwise, the heating power changes from maximum (position 6) to minimum (position 1). In the "Neva" distribution line, the leftmost switch is switched onM.01.000.000RE, change.01 changes the backlight lamp on the shelf and the front panel of the module.

Attention! Do not use containers with a bottom diameter smaller than the diameter of the hotplate for heating food. This can lead to premature failure.

2.2.2. Module "Bain-marie for second courses".

Designed to keep hot food containers with side dishes and seasonings for second courses.

At the request of the customer, it is completed with standard seamless gastronorm containers of three sizes:

530 x 325 x 100; 530 x 325 x 150; 265 x 325 x 150.

The Atesi enterprise produces bain-marie for the second courses of "dry" and "wet" heating.

Heating of food in a "dry" bain-marie is carried out with the help of heating elements located under each gastronome container. Sectional partitions installed in the bain-marie bath allow to provide the required temperature in each separate section of the "dry" bain-marie.

Heating of containers in "wet" bain-marie is carried out with the help of hot steam, the temperature of the water inside the bath does not exceed 100 ° C and the products can not burn. The thermostat smoothly regulates the temperature of the water in the bath. A tap with a hose is provided to drain the water from the bathtub.

Attention! The volume of water in the bathtub of "wet" heating chambers must be at least "MIN" and not higher than the "MAX" level.

Check the water level periodically and top up if necessary.

2.2.3. Plate warming module.

The module is designed for heating plates of various diameters from 150 mm to 360 mm. Special stops allow you to fix stacks of plates of different diameters.

The presence of heated plates on the food distribution line ensures that food served on them cools much more slowly than on unheated plates.

The trays are stacked on the base of a lifting spring mechanism built into the elevator body. At full load, a small (up to 8-10 pieces) number of plates remains above the surface of the elevator, and the rest of the plates (about 30-35 pieces) are in the heated volume.

The design provides heating of the plates within the range of 30 ° - 60 ° C.

As the plates are removed, the mechanism automatically lifts the next batch (2-3 pieces) to the surface of the elevator.

The plates are heated by a heating element with a power of 0.27 kW, which is located at the bottom of the module under the elevator for feeding the plates.

Bella-Neva Bella-Nota Bella-Nota mobile module consists of three functional blocks:

The pedestal table is divided into two independent compartments - aggregate and main. The unit compartment houses the compressor, the condenser and the installation elements of the refrigeration unit. It is separated from the main one by a partition and closed by a door with a lock (Bella-Neva) or a removable panel (Bella-Nota). For reliable operation of the compressor, it is necessary to clean the condenser unit radiator at least once a month (for example, with a vacuum cleaner), for which there is a removable panel on the front side of the unit compartment. To remove the front or rear panel, you must first unscrew the two bolts at the bottom of the panel and remove it from the upper hook. The main compartment has two doors and can be used to store inventory. The volume of this compartment is not cooled.

For displaying products there are: in the Bella-Neva line - two, and in the Bella-Nota line - one level of lattice shelves. The working chamber of the showcase is illuminated by a built-in lamp with a fluorescent lamp.

The refrigeration system uses a refrigerant - freon R22.

The upper box is designed to accommodate the air cooler and mounting elements of the refrigeration unit. This arrangement of the air cooler allows quick cooling of the entire volume of the showcase.

To control the work of the showcase on the front panel there are:

illuminated pushbutton switch "0" - "1" to turn on the compressor, illuminated pushbutton switch "light" to turn on the showcase lighting, digital display to display information about the showcase operating mode.

The digital display allows you to program any operating mode of the refrigerated display case. At the "Atesi" enterprise, the most optimal mode has been set and for the purpose of involuntary reprogramming, a code has been introduced that excludes access to changing the operating mode of the refrigerated display case.

If it is necessary to reprogram the operating mode, contact the manufacturer. Refrigerated display cases are configured for the following operating mode: compressor operation until the temperature reaches + 2 ° С (at full load no more than 1 hour), compressor shutdown, when the temperature rises to + 8 ° С, compressor restart, etc. To improve the operation of the air cooler, the forced defrost mode is activated every 2 hours, the compressor stops and within 15 minutes the air cooler is defrosting, then the whole cycle of the showcase is repeated.

The module operates in the mode of frequent door opening. Warm air from the environment constantly penetrates into the cooled volume, therefore, temperature unevenness throughout the volume of the cooled chamber is possible. The temperature in the room where the module is installed should not exceed 25 ° С, otherwise the refrigeration unit will work with overload and it will take more time for it to reach the set cooling mode.

To collect condensate from the evaporator, the showcase is equipped with a drain tray, which is located: in the Bella-Nota lines directly under the air cooler in the volume of the working chamber; in the BellaNeva lines on the lower frame of the module under the aggregate compartment. Periodically monitor the level of condensation in the trays. The accumulated moisture must be drained at the end of each working day, and at high humidity, temperature and frequent opening of the showcase doors, at least after 4 hours.

For reliable and durable operation of the showcase, it is not recommended to place it close to heating equipment, heating radiators, etc., as well as in places where it is exposed to direct sunlight. Do not obstruct the blinds in the unit compartment.

To illuminate the interior of the refrigerated display case, it is necessary to install a lighting lamp in the mounting slots. Then insert the protective glass into the channel-fixing device and fix it with self-tapping screws at the top of the glass part near the lamp.

2.3.2. Cold Table Module

Designed for storage, display and sale of drinks and food. Cooling takes place in the volume of a special niche of the countertop with the help of an evaporator fixed to the bottom of the bath.

Functionally, the "Cold table" corresponds to the pedestal table of the "Refrigerated display case" module. The approximate temperature in the cooled volume is in the range from -2 ° С on the surface to + 10 ° С at a height of 60 mm from the surface of the bath. Depending on the operating conditions of the module (temperature, relative humidity, etc.), it is possible to adjust the operating mode using the temperature regulator located in the upper part of the unit compartment. Lowering the temperature is provided by turning the knob clockwise. Cooling occurs due to the refrigerant R22 freon. The overall dimensions of the module bath allow the use of a set of standard gastronorm containers. For draining condensate from the bath, it has a drain connection.

3. Requirements for safety and fire safety.

3.1. The power distribution line modules are designed with protection against electric shock in accordance with class I in accordance with GOST R IEC 335-1-94, the degree of protection in accordance with GOST 14254 - IP20.

3.2. Line modules must be additionally grounded with a bus with a cross-section of at least 2.5 mm (the grounding bolt is located on the left on the lower frame of the module).

3.3. The line must be connected to the electrical network from a separate circuit breaker.

The module connection diagram is shown in reference appendix 5.

3.4. Mobile Dispensing Modules must only be used with a socket outlet that has a protective earthing connection.

3.5. Attention! The temperature of the hot plates for the main course and the heating elements for the main course is high. Do not allow exposed areas of the body to touch heating elements.

3.6. After finishing work on the distribution line, set the electrical switches of the modules to the "0" position. Disconnect the distribution line from the mains using the mains switch.

3.7. It is forbidden to work on the line with open doors, removed covers, damaged glasses, faulty electrical components.

4. Preparation for work and work procedure.

4.1. Check the straightness of installation of the distribution line modules. The tray guides must fit together tightly without rungs. If necessary, using the adjustment of the legs, level the modules. After unpacking, keep the modules at room temperature for at least 2 hours.

Place a condensate drain pan under the cooling unit (Bella-Neva) along the guides. As it fills, it is necessary to pour out the accumulated liquid.

4.2. The distribution line modules are controlled from the control panel of the corresponding modules.

4.3. Check the hygienic condition of the dispensing line before starting work. All surfaces must be clean, shelves and gastronorm containers washed and dried. Glasses must not be cracked.

4.4. Switch on the refrigerated display case, bain-marie for the first and second courses with the appropriate electrical switches.

4.5. Before turning on the heating elements of the bain-marie for the second courses, it is necessary to put sectional partitions and, if necessary, put on non-stick screens on the heating elements.

4.6. After entering the mode of refrigerating modules, as well as bain-marie for the first and second courses, bookmark the products. Place cutlery in the tool module, place rolls or sliced ​​bread, put clean trays on the lower block of the module. The line is ready to go.

4.7. When preparing the mobile distribution line for operation, it is necessary to install the modules on a flat horizontal surface.

4.7.1. Fix each module with a wheel brake.

4.8. Disconnection order.

After finishing work, set the switches of the bain-marie for the first and second courses, refrigeration modules to the "0" position.

Free line modules from products. Remove the cauldrons (or containers) from the bain-marie for the first courses, the gastronorm containers from the bain-marie for the second courses.

Attention! In order for the hot plates of the first courses to serve for a long time, do not leave them switched on without containers installed on them, in order to avoid overheating.

5. Servicing the food distribution line.

5.1. All maintenance work is carried out with the line disconnected from the mains.

5.2. Maintenance work is carried out by qualified personnel only.

5.3. Every day at the end of work, it is necessary to thoroughly clean the food distribution line from food debris, condensation, fat, etc.

2.1... The dosing unit consists of four receiving hoppers with a cylindrical shape with a conical bottom, where raw components are received depending on the recipe, dosing is carried out by vibrating conveyors into the storage hopper, where the components are mixed. The reception of raw materials into the receiving bins is carried out by means of a vacuum, which is created by a vacuum pump equipped with a dust collection system.

The extruder consists of a single screw press, a polymer melt pump, a slide filter, a forming head and an evacuation unit. The extruder is used for mixing, homogenizing, evacuating, filtering and molding the melt.

A single-screw press includes a cylinder with a screw-threaded worm embedded in it.

Heating of polycarbonate as it moves along the length of the barrel of the extruder is carried out by means of heating zones and friction energy of granules.

The thermal control and regulation system includes heaters and thermal automation devices. All, except for the first, thermal zones of the press cylinder are heated by electric resistance heaters, the first zone of the cylinder is heated with oil from the oil station. Temperature control of each of the zones is carried out by thermal automation devices. In the degassing zone, the gas component is removed from the polymer melt, which is formed as a result of heating the polymer mass.

The polycarbonate required according to the recipe for the production of a given sheet size is weighed and fed in portions to the intermediate mixing hopper, from which it enters the extruder through a magnetic trap. Crushed and dye concentrate are loaded into the same intermediate hopper by vibrating conveyors (when the sheets dyed in the mass are released).

The volatile components released during extrusion are removed from the melt through a degassing nozzle using a vacuum unit.

The vacuum unit includes a liquid ring vacuum pump, a water collector, a plate heat exchanger, a piping system, and two separator tanks. The exhaust from the vacuum pump is directed to the sump. Filtered gas products are discharged into the atmosphere, and water from the tank is periodically drained into a special container and disposed of.

Polycarbonate melt from the press cylinder is fed by a polymer melt pump to the forming head through an adapter, where it is pushed through the forming holes of the die in the form of a hollow structure of a honeycomb profile.

There are 8 heating zones on the extruder barrel, the polymer melt pump has 3 zones, the head is heated by electric resistance heaters. The number of zones of the head is 11, the number of the transition flange is 5.

Depending on the grade of the processed material, temperature regulation by zones is allowed.

The formed sheet enters the calibrator. Where it acquires a given size, it cools.

The movement of the sheet along the line is carried out by a pulling device.

After the pulling device, the sheet undergoes thermal stabilization in an oven, where the internal stresses in the sheet are relieved at an appropriate temperature. The temperature in the oven is maintained by electric heaters of ten infrared heating zones.

A protective film is glued to the formed and stabilized sheet, both from the outside and from the inside. This takes place on a device combined with a second pulling device. The markings are then applied to the edge of the sheet using an inkjet printer. After that, the finished sheet is cut to the size specified in the TU or specified when ordering.

The food distribution line is designed for short-term (up to 4-6 hours) storage and distribution of first and second courses, hot and cold snacks and drinks, confectionery, providing customers with cutlery and accessories in the public catering system. The versatility of the distribution line and the complete set of modules on an individual order allows you to organize meals for various categories and groups of people of an almost unlimited number at such facilities as: industrial enterprises, educational institutions, military units, canteens, cafes, etc. The company "Atesi" currently produces 3 types of food distribution lines "Bella-Neva" and "Bella-Nota" and the food distribution line "Bella-Nota mobile" - a mobile distribution line with folding guides for trays, the modules of which are equipped with wheels. The low price of the Bella-Nota line is provided due to the smaller dimensions of some modules in comparison with the Bella-Neva, as well as the manufacture of body elements, which cannot come into direct contact with food during operation, from galvanized steel. Mobile distribution modules allow organizing power distribution lines in any place where there is an electrical supply. The modules are equipped with four wheels, two of which are equipped with a brake for fixing the module. The sliding line modules have an open shelf; the front panel of the module can be illuminated. Bella Neva food distribution line modules have the maximum overall dimensions of those produced by Atesi and are almost completely made of food grade stainless steel, which greatly simplifies the sanitary processing of this line and increases its service life. In addition, all shelves of the Bella Neva line are equipped with lighting, which provides it with a wider range of applications (shaded or dimly lit rooms). On the consumer side, the modules of the "Neva" and "Nota" line are equipped with sanitary protective glasses that prevent food from getting dust. In the "Neva" line, glass restricts access to food from the consumer. The design of the line modules is thought out in such a way that it is easy to carry out thorough sanitization of all surfaces in contact with food during operation. Power distribution lines can be installed in a straight-line version, or, using rotary modules, in corner combinations, both with external and internal rotation. General instructions. The Neva distribution line has a 2-section cabinet, divided into sections by an inclined shelf, which allows not only laying out baked goods for direct distribution, but also storing them for quick replenishment. At the request of the customer, it is completed with standard seamless gastronorm containers of three sizes: 530 x 325 x 100; 530 x 325 x 150; 265 x 325 x 150 (100). Heating of food is carried out using heating elements located under each gastronome container. Sectional partitions installed in the bain-marie bath allow to provide the required temperature in each separate section of the bain-marie. The Atesi enterprise produces bain-marie for the second courses of "dry" and "wet" heating. Since the heating of containers in humid bain-marie is carried out with the help of hot steam, the temperature inside the bath does not exceed 100 C and the burning of food is excluded. 13 Heating of each heating element of the bain-marie is switched on by a separate button located under the corresponding section of the bain-marie. The extreme left switch turns on the shelf illumination ("Neva"). Attention! The volume of water in the trays of "wet" heating bain-marie is designed for 4 hours of continuous operation until it boils down completely. Check the water level periodically and top up the Plate Warmer Module if necessary. The module is designed for heating plates of various diameters from 150 mm to 360 mm. Special stops allow you to fix stacks of plates of different diameters. The presence of heated plates on the food distribution line ensures that food served on them cools much more slowly than on unheated plates. The trays are stacked on the base of a lifting spring mechanism built into the elevator body. At full load, a small (up to 8-10 pieces) number of plates remains above the surface of the elevator, and the rest of the plates (about one piece) are in the heated volume. 15 The module consists of three functional blocks: - table-pedestal; -refrigeration showcase; - upper box. The pedestal table is divided into two independent compartments, an aggregate and a main one. The unit compartment houses the compressor, the condenser and the installation elements of the refrigeration unit. It is separated from the main one by a partition and closed by a door with a lock (Bella-Neva) or a removable panel (Bella-Nota). For reliable operation of the compressor, it is necessary to clean the condenser unit radiator at least once a month (for example, with a vacuum cleaner), for which there is a removable panel on the front side of the unit compartment. To remove the front or rear panel, you must first unscrew the two bolts at the bottom of the panel and remove it from the upper hook. The main compartment has two doors and can be used to store inventory. The volume of this compartment is not cooled. The refrigerated display case is equipped on the personnel side with two sliding doors, and on the buyer's side: - in the Bella-Neva line there are three rows, and in the Bella-Nota line there are two rows of hinged doors. For displaying products there are: in the Bella-Neva line - two, and in the Bella-Nota line - one level of lattice shelves. The working chamber of the showcase is illuminated by a built-in lamp with a fluorescent lamp. The refrigeration system uses Freon-22 refrigerant. The upper box is designed to accommodate the air cooler and mounting elements of the refrigeration unit. This arrangement of the air cooler allows quick cooling of the entire volume of the showcase. To control the operation of the showcase on the front panel there are: a backlit pushbutton switch "mains" to turn on the compressor, an illuminated pushbutton switch "light" to turn on the showcase lighting, a digital display to display information about the operating mode of the showcase. The digital display allows you to program any operating mode of the refrigerated display case. At the Atesi enterprise, the most optimal mode has been established and with the aim of non-production - 15

16 free reprogramming, a code has been entered that excludes access to changing the operating mode of the refrigerated display case. If it is necessary to reprogram the operating mode, contact the manufacturer. Refrigerated display cases are set for the following operating mode: compressor operation until the temperature reaches +2 C (at full load no more than 1 hour), compressor shutdown, when the temperature rises to +8 C, compressor restart, etc. To improve the operation of the air cooler, the forced defrost mode is activated every 2 hours, the compressor stops and within 15 minutes the air cooler is defrosting, then the whole cycle of the showcase is repeated. The module operates in the mode of frequent door opening. Warm air from the environment constantly penetrates into the refrigerated space, therefore, the temperature unevenness throughout the refrigerated chamber volume is 5 C. The temperature in the room where the module is installed should not exceed 25 C, otherwise the refrigeration unit will work with overload and it will take more time to exit to the set cooling mode. To collect condensate from the evaporator, the showcase is equipped with a drain tray, which is located: in the Bella-Nota lines directly under the air cooler in the volume of the working chamber; in Bella-Neva lines on the lower frame of the module under the aggregate compartment. Periodically monitor the level of condensation in the trays. The accumulated moisture must be drained at the end of each working day, and at high humidity, temperature and frequent opening of the showcase doors, at least after 4 hours. For reliable and durable operation of the showcase, it is not recommended to place it close to heating equipment, heating radiators, etc. ., as well as in places of direct sunlight. Do not obstruct the blinds in the unit compartment. To illuminate the interior of the refrigerated display case, it is necessary to install a lighting lamp in the mounting slots. Then insert the protective glass into the fixing channel and fix it with self-tapping screws at the top of the glass part near the lamp. 16

17 Module "Cold table" Designed for storage, display and sale of drinks and food. Cooling takes place in the volume of a special niche of the countertop with the help of an evaporator fixed to the bottom of the bath. Functionally, the "Cold table" corresponds to the pedestal table of the "Refrigerated display case" module. The temperature in the cooled volume is provided in the range from -2 C on the surface, to +10 C at a height of 60 mm from the surface of the bath. Depending on the operating conditions of the module (temperature, relative humidity, etc.), it is possible to adjust the operating mode using the temperature regulator located in the upper part of the unit compartment. Lowering the temperature is provided by turning the knob clockwise. Cooling occurs due to the refrigerant Freon-22. The overall dimensions of the module bath allow the use of a set of standard gastronorm containers. There is a drain nipple to drain condensate from the bathtub. Before starting work, check the hygienic condition of the dispensing line. All surfaces must be clean, shelves and gastronorm containers washed and dried.
