  • one egg;
  • 110 grams of boiling water;
  • 4 grams of baking powder;
  • 30 grams of dry cocoa;
  • 120 grams of flour.

For cream cheese:

  • 200 grams of curd cheese (for example, Hochland);
  • 20 grams of powdered sugar;
  • 50 milliliters of heavy cream (35%).

Caramel:

  • 300 grams of granulated sugar;
  • 50 grams of butter;
  • 300 grams of fat, 35 percent cream;
  • 70 milliliters of water;
  • a teaspoon of salt;
  • in addition, you will need 65 grams of roasted peanuts;

Chocolate mousse:

  • 100 grams of milk chocolate;
  • gelatin (5 grams);
  • 20 milliliters of water;
  • 150 grams of fat, 33 percent cream.

Step by step cooking:

1. According to tradition, the preparation of the cake begins with the cakes. Beat butter in a mixer with granulated sugar. Pour the egg here. Mix all dry ingredients from the list in one bowl. In the mixer bowl, after the egg, send half of the mixture. Stir until uniform. Now pour in milk, boiling water and add the rest of the cocoa mixture. Beat until smooth.

2. Line a baking dish (in our case it is round, 14 centimeters in size) line with parchment and pour out the dough. Bake the biscuit at 180 degrees for about 40 minutes. Wrap it with cling film and remove for 6-8 hours until it cools completely.

3. Heat the cream and dissolve the chocolate in it. Put this mixture in the refrigerator for 4 hours. Soak gelatin in water. Then whip the cooled cream until thick and slowly pour the gelatin into such a soft mass, constantly working with a mixer.

4. Cooking caramel. Pour water and sugar into a large saucepan. Stir and wait for a full boil. Now you need to reduce the fire to a minimum. Cook for a few minutes until a pleasant amber color. As soon as it acquires such a shade, remove from the stove, quickly add salt and softened butter. Bring the cream to a boil and add immediately to the hot caramel. It is better to do this in two parts. Stir constantly to distribute the ingredients evenly.

5. Put the caramel back on the fire and simmer to 108 degrees over low heat, stirring constantly. Remove thickened caramel from the stove and cool slightly. When warm, stir the peanuts into 160 grams of caramel.

Suddenly you do not have a cooking thermometer to roughly determine the heating temperature of the caramel, scoop up a little with a spoon and pull up. If the thickness of the formed thread is about 3 mm. - this is a temperature of 103 ° -105 ° degrees. And the thread thickness is about 5 mm. Is 106 ° -110 °.

6. For cream cheese, beat all the ingredients together until a thick cream.

7. Cut the biscuit into 3 cakes. At first, using a special bag, make a ring of cream cheese.
