How to cook “Pizza according to Dukan”

Prepare everything necessary ingredients. Boil the breast in advance until cooked, cool it.

For the dough, mix eggs, baking powder, kefir and be sure to bran. Mix well until smooth. You can also beat everything with a mixer or hand whisk.

Leave the resulting mass for 10 minutes for the bran to swell. In the meantime, prepare the filling.

Cut the boiled breast into small pieces. As a matter of fact, the size of the slices depends on your preferences; you can even put whole slices of chicken on the pizza.

Cut the tomatoes into slices or halves.

Heat the frying pan thoroughly and pour the dough onto it. Fry for about 2-3 minutes. Once the bottom of the cake is well set, place the shredded chicken on top.

  • Corn starch - 10 g
  • Gluten – 15 g
  • Salt - 1/3 tsp.
  • Citric acid - 1/4 tsp.
  • Baking powder - 1 tsp.

Fill:

  • Soft low-fat cottage cheese - 150 g
  • Egg - 1 pc.
  • Salt - 0.5 tsp.
  • Dill

Filling:

  • Tomato paste - 1 tbsp.
  • Tomatoes - 1-2 pcs.
  • Bell pepper – 50 g
  • Olives - 6 pcs.
  • Sausage (or ham, or smoked meat of permitted fat content) - 100-150 g
  • Oregano, herbs - quantity to taste

Preparation:

Turn on the oven to heat up, temperature - 180 degrees.

Line a mold 30 cm in diameter with paper.

Divide the eggs into whites and yolks.

We measure the remaining ingredients into the yolks, except for citric acid.

Beat the whites with citric acid to strong peaks.

Properly whipped whites do not fall out of the container if it is turned over and there is no free liquid at the bottom.

Mix the yolks with everything else with a mixer.

Using a spoon, add the whites to the yolks in 3-4 stages. Put some of it in and carefully stir with a spoon until smooth, trying not to precipitate the whites. And so put everything in parts.

The dough is thick, not flowy.

Spread it over the mold and put it in the oven.

Time - approx. 15 minutes (check your oven).

Spread tomato paste onto the baked crust.

Place the filling on top. I have sausage first, then peppers, then tomatoes, olives and spices.

This is so delicious.

Fill everything with filling that imitates cheese. To prepare it you just need to mix all the ingredients.

I use such cottage cheese.

Place in the oven near the top. The time depends on your oven, it took me 15-20 minutes.

  • protein isolate - 3 tbsp;
  • skimmed milk powder - 1 tbsp. optional;
  • chicken egg - 2 pcs.;
  • natural yogurt without additives - 125 g;
  • baking powder - 0.5 tsp;
  • salt, spices.

For filling:

  • ham with 4% fat content - 200 g;
  • onion - 1 pc.;
  • tomato paste without sugar.

Dukan pizza dough can be made from any protein isolate, but for greater thickness it is better to choose soy protein.

First, beat the eggs with a fork. Add all other ingredients to them and mix well. The dough should be quite thick and stick to your fingers.

Spread the mixture onto the silicone surface of the baking sheet or mold with a damp spoon. Bake at 180 degrees for 12 minutes. You will get an elastic cake, slightly dry around the edges.

Distribute the filling over the base to suit your taste. Bake for another five minutes. When serving, garnish with herbs.

Hearty pizza according to Dukan

The following recipe will be relevant starting from the alternation stage.

Ingredients for the dough:

  • chicken egg - 2 pcs.;
  • corn starch - 20 g;
  • salt.

For the sauce:

  • tomato paste - 1 tbsp;
  • low-fat natural yogurt - 2 tbsp.

For filling:

  • ham 4% fat;
  • tomatoes;
  • bell pepper;
  • Champignon;
  • low-fat cheese;
  • greenery.

Beat the eggs, add starch in small portions, continuing to stir with a spoon. Salt the dough and stir until completely homogeneous. Bake in a silicone mold, from it ready dish easy to get even if you don't use oil. Cooking temperature - 180 degrees, cooking time - five minutes.

For the sauce, combine yogurt with tomato paste.

You can choose the filling to your taste, guided, of course. Grind the ingredients as well at will: large or small.

Grease the base with sauce, place the filling on top, sprinkle with grated cheese and herbs. Bake the pizza for about 10 minutes.

Ingredients for the dough:

  • low-fat kefir - 1 tbsp;
  • chicken egg - 2 pcs.;
  • baking powder - 0.5 tsp;
  • oat bran - 4 tbsp;
  • salt.

For filling:

  • tomato puree without sugar;
  • low-fat cheese;
  • onion - 1 pc.;
  • chicken fillet, lean fish, vegetables - to taste.

Combine all ingredients for the dough in one container, add salt, and mix thoroughly. Wipe the pan with a napkin soaked in vegetable oil. Pour the dough onto a well-heated surface, cover with a lid, and fry the base on both sides.

.) Pizza according to Dukan, which cannot be distinguished from the real thing, can be delicious. The secret of delicious pizza is the harmony of all its components. Let's create it!

  • oat bran (ground) – 2 tbsp. spoons
  • skimmed milk powder – 1 tbsp. spoon (=1/3 of the product from the list of additional ones)
  • corn starch - 1 tbsp. spoon (can be replaced with milk powder) (= 1 product from the list of additional ones)
  • eggs – 1-2 pcs. (depending on the shape, I took 1 egg and left 1 white - I used it in this dough)
  • low-fat yogurt without sugar - 2 tbsp. spoons
  • tomato paste – 1 tbsp. spoon
  • water – 1.5-2 tbsp. spoons
  • sweetener
  • red hot pepper
  • oregano
  • dill
Filling
  • smoked chicken breast - ½ pc.
  • tomatoes – 1/2 pcs.
  • pickled cucumber – ½ pc.
  • mushrooms - a little
  • cheese - I have 9% - 46 g (= 1 product from the list of additional ones)

In total, there were 3 products from the list of acceptable products. The diameter of the pan in which I cook pizza is 25 cm.

Preparation

Separate the whites from the yolks. Mix the yolks with yogurt and salt, stir. Beat the whites to stable peaks. Pour the mixture of yolks and yogurt into the whites, sift the dry ingredients. Do you see any lumps left? Also rub them through a sieve with a spoon.

Mix the dough using vertical movements from bottom to top, making sure that the whites do not fall off. Pour the dough into a mold that can be lightly greased vegetable oil. The dough is fluffy and the whites do not fall off.

Flatten the dough with a spoon.

Place in a preheated oven and bake until almost done.

Prepare the sauce. It should be tasty and aromatic! Add water, spices, salt and sweetener to the tomato paste. We try to make sure it’s tasty, a little salty, not sour, sweet as you like. And be sure to add spices. Oregano is such a cool herb, just made for pizza. – just a little bit of it is needed to add some zest. And fresh dill is so fragrant!

Apply the sauce to the crust.

We cut the filling. I like it big. I used dry white mushrooms. I poured boiling water over them, let them brew, and drained the water. Fragrant mushrooms are ready!

Spread the filling onto the crust.

Grated cheese is the final touch before putting the pizza in the oven. Send and bake until golden brown, delicious cheese crust.

Dukan pizza recipes include different ways cooking, for example, you can bake it in microwave oven. To prepare the dough, use an egg, ground oat bran and starch (2 tbsp/1 tbsp). In addition to these, you need the following ingredients: 20 g of SOM (skimmed milk powder), low-fat yogurt (2 tbsp) and salt.

Mix dry ingredients, add yogurt and yolk. Beat the egg white and carefully fold it into the dough. Lightly grease a large diameter glass bowl and pour in the dough. Cook on medium power for 3 minutes.

Prepare the sauce from natural tomato paste and water (1 tbsp/2 tbsp). Add seasonings. For the filling, use half the smoked chicken breast, half a tomato, half a pickled cucumber, a piece of low-fat cheese. Grease the base with sauce, layer the filling, sprinkle with cheese, cook for another 2 minutes. The cooking time can be adjusted (when preparing pizza for the first time, watch the process).

In a slow cooker

You will bake this pizza in a slow cooker. Prepare yeast dough. Dissolve 10 g of compressed yeast in 100 ml of warm skim milk. Mix the dry ingredients - use starch and oat flour wheat bran(2 tablespoons of each component), as well as a pinch of salt. Add them to the milk along with the beaten egg, knead the dough, leave for 20 minutes. Line the bowl with baking paper (this will make it easier to remove the pizza), add the dough and smooth it out. Top with tomato paste diluted with water and seasoned with spices, spread the onion (fry it using a few drops of oil), add tuna pieces (use canned own juice), sprinkle with as low-fat grated cheese as possible. Cook for 40 minutes (Baking).

On Attack

Even the most strict stage of the diet (Attack) does not deprive you of the pleasure of eating pizza, although you will have to comply with certain restrictions. Prepare the dough from isolate and oat bran(3 tbsp/2 tbsp), COM and wheat bran (1 tbsp each). You will also need eggs (2 pcs.), 0.5 tsp. baking powder and 125 ml low-fat yoghurt. Don't forget about salt and spices. The filling will be homemade ham and low-fat cheese.

Combine dry ingredients, mix eggs with yogurt. Knead the dough (it will be quite sticky). Cover a baking sheet with paper, form a base (or make several small bases for mini pizzas). Spread the filling and sprinkle with cheese. Bake for 15-20 minutes (180 degrees).

In a frying pan (without bran)

Combine foamed eggs (2 pcs.), salt and 20 g of starch. Fry the crust in a non-stick frying pan and turn over. Brush the browned side with tomato puree, sprinkle with seasonings, and add the filling (pieces of meat, mushrooms, half a tomato). Sprinkle the pizza with grated low-fat cheese and close the lid. Cook on low heat for 3-5 minutes.
