My eldest son, like me, is very fond of baking with raisins and therefore quite often asks me to make a cupcake. In general, cupcakes are a favorite pastry for many kids, especially those made with raisins, nuts, or other goodies. And they are prepared quite simply and quickly.
Here is the recipe for my kefir raisin cupcake, which turns out to be very tasty.
Required Ingredients:

  • Flour - 2 cups;
  • Eggs - 2 pcs.;
  • Sugar - 1 cup;
  • Kefir - 1 glass;
  • Baking powder - 2 teaspoons;
  • Vegetable oil - 1/3 cup;
  • Raisin.
First you need to beat the eggs with sugar.


Then add 1 cup of kefir and mix well.


Next, gradually add the flour to the egg-kefir mixture, stirring continuously so that lumps do not form in the dough. Add baking powder and vegetable oil. We mix everything well.


Now add well-washed raisins to the dough. Instead of raisins, you can use nuts or candied fruits.


It is necessary to mix everything thoroughly.


I have a special form for making a cupcake, namely a metal one with wavy sides. But you can use any other form for baking in the oven.
Tip: To prevent the cake from sticking to the mold, you can sprinkle it with semolina or breadcrumbs.


Pour the resulting dough into a baking dish and put in the oven.


It is desirable to bake this cake with raisins at a temperature of 180 degrees for 50 minutes.
But you can guess the readiness of the cake yourself by the ruddy muffin and appetizing aroma.

Ingredients: a faceted glass of medium-fat kefir and the same amount of granulated sugar, 2 full glasses of high-grade flour, a pinch of salt, 1.5 tbsp. spoons of baking powder, 3 eggs, half a pack of unsalted butter.

  1. Raw eggs are poured into a deep container and beaten to a thick foam. Slightly warmed kefir is also sent here. Suitable product room temperature.But cold kefir can deprive the cupcake of splendor.

  3. Pre-steamed with boiling water and dried raisins are poured, as well as flour with vanilla and salt.
  4. Thick dough is laid out in a rectangular shape.

A cake is baked on kefir with raisins to a dry skewer for 50-55 minutes at 190 degrees.

  2. Margarine is melted over low heat. Sand is poured directly into the warm mass, raw eggs and soda slaked with table vinegar are introduced. The ingredients are kneaded until the sweet grains are dissolved.
  3. In the resulting test base is poured fermented milk product with mango.
  4. It remains to add crushed walnuts and flour.
  5. The dessert is baked in a well-heated oven for about half an hour.

The center of each cupcake is removed with a special tool. The resulting space is filled with any liquid filling to choose from: chocolate icing, condensed milk, jam, etc.

  • 250 grams of raisins or to taste (I used not only raisins, but also dried cherries, dried apricots and dried mangoes and took about one and a half times more dried fruits, I like when there are a lot of them),
  • 2 tablespoons vanilla sugar.

Recipe for a cupcake with raisins on kefir.

I must immediately warn you, the test turns out to be quite a lot. Somehow I did not immediately pay attention to this, I was too happy about such a chic opportunity to attach a large number of sour milk. And when I realized, there was nowhere to go. From the indicated amount of ingredients, I got 1 large cupcake and 12 small ones.

We put soda in sour milk. Let's mix well. Let's melt the butter. Rinse and dry raisins (or other dried fruits) (cut large dried fruits into small pieces).

Beat eggs with sugar and vanilla sugar. Add butter and mix everything well.

Add sour milk to the egg-butter mixture and mix everything well again.

Sift the flour, add it to the liquid ingredients and mix everything.


We put raisins (dried fruits) in the resulting dough. Let's stir.

Lubricate the cupcake mold with vegetable oil (just rinse the silicone mold with water). Small molds also need to be greased. But personally, I prefer to put a disposable paper mold inside the main form.

Fill small cupcake liners about 2/3 full with batter. Place the rest of the dough into a large cake pan.


We will bake small cupcakes at 160 degrees for about 30-40 minutes.

Large cupcake 60-90 minutes. Perhaps longer. It all depends on the characteristics of the oven.
