In this recipe, semolina will bind the components together - you will need very little of it.

  1. Soak 1 slice of a loaf without a crust in milk.
  2. We prepare minced meat from fillets, as usual - we make 500 - 600 g. Together with it we turn 1 onion, ½ a potato and bread soaked by this time.
  3. Pour in 1 tbsp. semolina, salt, season with pepper, paprika if desired, add 1 tbsp. chopped greens.
  4. We mix everything properly and, covering the minced meat with a lid or putting it in a bag, put it in the refrigerator to rest for 25 - 30 minutes.

Over time, we take out the minced meat and form the cutlets. They are most delicious if breaded in breadcrumbs and fried in hot oil. This will create a wonderful crispy crust, under which there will be tender juicy flesh.

Serve with vegetable salad, sprinkled with green onions.

Turkey cutlets with bran

This option is suitable not only for those who are losing weight, but also for people who want to diversify their diet with healthy dishes.

Ingredients

  • Turkey fillet - 400 g
  • Egg - 1 pc.
  • Bran - 35 g
  • Onions - 1 pc.
  • Dill, cilantro or parsley - 30 g
  • Salt, pepper - to taste

Preparation

If desired, let the minced meat stand, so the cutlets will turn out even softer, because the bran will have time to swell.

  1. We drive in an egg, pour in bran (it is best to take oatmeal, since rye has its own pronounced taste), salt, season and knead well.
  2. Grind the meat together with the onion into minced meat.
  3. We take only leaves from greens, leaving cuttings - this is necessary to make the cutlets more tender. You cannot scroll the "grass", it can paint the minced meat, so chop it finely with a knife.
  4. Stir again and form patties.
  5. If you want to get an absolutely dietary version, we send them to a double boiler or a multicooker, setting it to the "steam cooking" mode. If you want a crispy crust, fry in oil in a pan.

Ground turkey cutlet sauce

These cutlets go well with a very easy-to-prepare sauce.

  • Beat 1 glass of water with 1 tbsp with a mixer in a small saucepan. sour cream, 2 tsp. tomato paste and 1 tsp. mustard, add and add 2 tsp. flour.
  • Warm up, stirring over low heat for 5-7 minutes, and serve with cutlets.

We make them with the addition of flour directly to the minced meat, the taste will hardly change from this, but the consistency will become a little denser, and they will be better saturated, so you can not cook a side dish for them at all.

  • Twist 500 g of turkey fillet in a meat grinder and set aside.

Option 1

  1. Cooking minced meat, as usual, from 400 g of fillet.
  2. We twist 1 onion and 1 red bell pepper to them, drive 1 egg into the minced meat.
  3. Combine with 1 slice of loaf soaked in milk.
  4. Salt, pepper, knead everything and put it in the refrigerator - so the minced meat will become denser and it will be easier to mold.
  5. We take 100 g of hard cheese and cut it into 1 by 2 cm cubes.
  6. We take out the minced meat and divide it into several equal parts according to the number of the resulting pieces of cheese.
  7. Now we knead each part in the palm of our hand into a thick cake, put cheese in its middle and carefully cover it with minced meat on all sides.

Fry, as usual - with or without breading. And you can bake cutlets with a surprise on a greased baking sheet for 30 minutes at 200 ° C.

The same recipe can be repeated with soft melted cheese. We put 1 tsp in the center. cheese and carefully cover it from all sides. We cook them in the same way as with solid - in the oven or on the stove.

Option 2

In this recipe, cheese will be part of the minced meat itself. We make it from the same ingredients as in the previous recipe, only the egg and bread can no longer be added - the cutlets will keep their shape perfectly thanks to the melting cheese.

  • Grind 400 g fillet, 1 onion and 1 bell pepper in a blender.
  • We add 1 tbsp. chopped basil (leaves) and 100 g grated cheese on a coarse grater.
  • Salt, season with black pepper and nutmeg, knead and fry or bake.
