We will need: tomatoes, garlic, allspice, salt, sugar, vinegar, sunflower oil and glass jars, of course.

Cut the washed tomatoes into halves. We clean and wash the garlic. We also thoroughly rinse the cans, pour over with boiling water. At the bottom of the jar, put a few cloves of garlic, a few peppercorns. Gently lay out the tomatoes, cut down. Fill the jar with boiling water, close the lid and let stand. In the meantime, we are preparing the marinade.

Marinade for 3.5 liters of water:
1.5 cups sugar, 2 tbsp. tablespoons of salt, 1.5 cups of vinegar. Put sugar, salt in the water, mix, bring to a boil and pour in the vinegar.

I put spices in the jar. Then add the tomatoes and chopped onion. Fill the jar with boiling water, close the lid and let stand for 10-15 minutes. In the meantime, we are preparing the marinade.

Marinade for 1 liter of water:
3 tbsp sugar, 1 tbsp. tablespoons of salt, 80 gr 9% vinegar. Put sugar, salt in the water, mix, bring to a boil and pour in the vinegar.

50 ml 9% vinegar, 2 tbsp. salt without a slide, 3 tbsp. sugar without a slide, 1 tsp. black peppercorns, 1 tsp. allspice peas, 2 pcs. bay leaves.

Rinse the tomatoes, dry with a paper towel. Choose ripe but strong tomatoes for canning. Cut the tomatoes into halves or quarters. You can marinate both very large and damaged tomatoes in this way, cutting them into small pieces and cutting out ugly places.
Rinse the parsley, chop finely.
Peel the garlic, cut the slices into eighths.
Peel the onion, cut into rings.
Put chopped parsley, garlic on the bottom of the prepared jars, pour in the calcined vegetable oil (1 tsp per liter jar).

  • 1 teaspoon allspice
  • 2-3 bay leaves
  • 40 g 9% vinegar (half with apple cider)
  • 1 tsp paprika

Canning tomatoes

Prepare jars - rinse and heat over steam for five minutes.

Boil the lids in water for 5 minutes.

Put garlic cloves and herbs at the bottom of the jars. I have stocks of frozen parsley.

Pour a dessert spoon of vegetable oil into each jar.

Cut the tomatoes into four to six slices.

Cut the onion into half rings.

Place tomatoes and onions in layers.

Prepare the tomato marinade

For a liter of water: a spoonful of salt, a spoonful of sugar and add 2 scoops of sugar substitute (it has no aftertaste). If you do not put sahzam, you need to take 3 tbsp. tablespoons of sugar.

Pour the liquid into a saucepan, add bay leaf and pepper, 1 teaspoon of paprika, pour in vinegar. For the sake of experiment, 20 g 9% and 20 g 6% apple - it turned out wonderfully.

Bring the brine to a boil and immediately pour the tomatoes to the very top, not literally 5 mm, that is, higher than the shoulders of the jars.

Sterilizing a tomato

Place the jars in a wide saucepan with a small towel or oven mitt on the bottom. Pour hot water to the top. My big banks are not fully submerged, that's okay. Cover, but do not screw up.

After the water in the pan starts to boil, reduce heat and heat the jars for 20 minutes.

Take out the jars, place them on a tray, and wrap them warmly with an old blanket or fur coat until they cool completely.

I always leave jars upside-down on the lids.

The amount of oil can be increased: take 2-3 tablespoons, I just drink the pickle from these tomatoes, and when there is more oil, it already seems superfluous.

Since the tomatoes are less often not in halves and not in quarters, but in thin slices, my jars are packed tightly. 1 liter of water + table vinegar and spices - fill in 2 liter and one 600 g can of tomatoes by volume - in the photo three cans they used all the brine according to the recipe.

By the way, I used tomatoes not only as an appetizer, but used it for pizza: I chopped several slices and added tomato paste and olive oil.

Tomatoes in gelatin for the winter

I told you the basic recipe, so to speak, the base.

But you can prepare tomatoes for the winter in a gelatinous filling.

Spices for 1 liter of water

  • 2 tbsp. tablespoons of salt (no top)
  • 3 tbsp. tablespoons of sugar (replace part with erythritol-based sahzam)
  • 1 teaspoon peppercorns
  • 1 teaspoon allspice
  • 2-3 bay leaves
  • 1 teaspoon ground sweet paprika
  • 2 tbsp. tablespoons of gelatin
  • 1 tbsp. a spoonful of vinegar essence (70%)

All preparations are as described above: herbs, garlic, layers of onions and tomatoes.

Prepare the marinade: pour water, salt, sugar (or sahzam), peppercorns, bay leaves, paprika into a saucepan. Just don't add vinegar and gelatin.

While the brine is boiling, fill the gelatin with about 100 g of water and put it in the microwave for 20 seconds at full power. Then stir for another 10 seconds. Again for 10 seconds - stir, all the gelatin should dissolve, you cannot bring it to a boil.

When the brine boils, turn off the fire and pour in the gelatin solution. Mix and pour in the tomatoes. We do not pour in vinegar yet - it stands separately and is waiting in the wings.

We make jars for sterilization in a pan, after boiling water in a pan (the brine does not boil in a jar), we stand for small fire 10 minutes.

Turn off the heat, pour vinegar essence into each jar and immediately roll it up. We wrap it up warmly and leave to cool. I take a little more than half a teaspoon of vinegar essence in 1 liter jar.

I have been making a recipe for a tomato in gelatin for many years, I tried other options, but I came to the conclusion that this is more convenient for me - when pouring vinegar essence before closing the jar. Since the jars do not boil during sterilization (the brine does not boil), gelatin does not lose its properties. It turns out to be a very tasty appetizer.
