When washing, it is very important to help yourself very gently with your hands so as not to crush the berry. Put the washed raspberries in a colander on a bowl to drain excess water.

3.Next, pour into a bowl clean water and rinse the raspberries in it without removing it from the sieve. To dry the berries, place them in one layer on a paper towel. Cover with another towel and blot lightly. You don't need to squeeze the berries! Raspberries need to be handled very carefully.

4.Pour the raspberries from the napkin into the pot. Sprinkle sugar on top. Let the raspberries sit for at least 4 hours. During this time, it will let the juice out and the sugar will partially settle to the bottom. If you leave raspberries for a longer period, store them in the refrigerator.

Do not mix the berries with sugar, otherwise they will choke. If you do large portion jam, you can sprinkle the raspberries with sugar in layers.

5. In order for the jam to stand for a long time, you need to sterilize well the jars and the rest of the dishes that will come into contact with the jam. Be sure to check the jars for chips and cracks. At the bottom of the cans indicate the year of its issue. Take cans that are no more than 5 years old. Sterilize the jars in a convenient way (in the oven, steamed, in the microwave). Also pour boiling water over the ladle, which you will pour the jam.

7.A minute before cooking, add lemon juice to the jam. It is taken in a ratio of 1 teaspoon per kilogram of berries. Sour berries and fruits contain a lot of pectin, which thickens well. 8.Pour the prepared jam into sterile jars. But don't roll it up right away! If you immediately roll up the jars with the lids, then the condensate will drip from the lid back into the jam. It is because of this that mold can form. Therefore, pour the jam into the jars, without adding 1 cm to the brim, and let it stand for 15-20 minutes. The jam should cool to about 50 degrees.

9. At this time, you can boil the lids for 5 minutes. Remove the hot lid from the boiling water with a fork, blot it with a napkin and cover the jar (cover the already cooled jam). Roll up and flip the jar to check if the lid fits well. Place the can on the barrel and roll it around the table a couple of times. Now you can put the jam and let it cool.

1. Raspberries need to be sorted out, remove all spoiled, unripe berries, debris. You do not need to wash if the raspberries are from your site. If you bought a berry, rinse it in cold water and dry.

2.Pour the sugar over the raspberries. You do not need to stir with a spoon, you can shake the pan. Or sprinkle with layers. Cover the pot with a lid or towel and let it sit for 3-5 hours for the raspberries to drain.

3. When a few hours have passed, you can cook the jam. Place raspberries over medium heat and bring to a boil. During heating, occasionally use a wooden spatula to run along the bottom so that the sugar does not burn. As soon as the jam starts to boil, remove it from the stove.

Be sure to skim off the resulting foam.

4.Let the jam cool completely and heat again over medium heat. After boiling, remove the pot from the hob. Wait until the jam has cooled down again. Now you can start sterilizing the jars, lids, ladle.

You should not increase the proportions of ingredients to avoid "running away" of the jam. Due to the small amount of raspberries, this cooking method is more suitable for a one-time brewing for tea, and not for preparations for future use.

However, nothing can prevent you from putting the ready-made raspberry jam in a bread maker into sterilized jars and rolling up the lids. Do not forget to store it in a cool place.

Raspberry jam with white chocolate

Ingredients for making original raspberry and chocolate jam:

  • Fresh raspberries - 6 cups
  • Vanilla (in pods) - 1 piece,
  • Granulated sugar - 6 glasses

Water is needed so that sugar does not turn into caramel during cooking.

As soon as the syrup has become homogeneous, raspberries are poured into it.

and cook it for 5-7 minutes.

Glass jars and lids must already be prepared in advance, the lids must be boiled, the jars must be sterilized in the usual way or in the microwave.
